Easy Recipes: Frittata Mini-Muffins

For a quick and convenient snack, try this small "fry."

 

A frittata, which is an Italian dish (‘frittata’ means ‘to fry’), is traditionally an open-faced omelet with meats and cheeses.

These “muffins” will take you less than 30 minutes to prepare, bake, and serve. In addition to being a great breakfast, they are also a portable snack that can be eaten anywhere, and they can be served as hors d'oeuvres or an appetizer before the main course.

Frittata Mini-Muffins

INGREDIENTS

2 T finely chopped onion
4 oz finely chopped turkey or other deli meat
8 beaten eggs
⅓ C shredded cheddar or swiss cheese
¼ C light cream
A sprinkle of dried or fresh herbs (like oregano, parsley, or basil)
Salt and pepper

DIRECTIONS

Preheat oven to 400°F. Generously grease two muffin tins (each with 24 cups) with butter or coconut oil for easy removal.

Whisk eggs, cream, salt, and pepper together. Stir in the turkey, onion, cheese, and herbs.

Pour mixture into the muffin cups, filling almost to the top.

Bake for 8–15 minutes until a knife inserted into the center of a muffin comes out almost clean.

Remove from the muffin cups and serve, or cool completely and store for later use.
